1 beetroot, peeled and diced

1 red onion, peeled and diced

1 red capsicum, diced

1/2 cup white sugar

1/4 cup red wine vinegar

1 tablespoon cornflour

1 tablespoon sweet chilli sauce

1/4 teaspoon salt


  1. Preheat oven to 200 degrees C.
  2. In a large roasting pan, combine beetroot, onion, capsicum, sugar, vinegar, cornflour, sweet chilli sauce and salt.
  3. Roast in preheated oven for 45 minutes, stirring occasionally, until vegetables are tender.
