When it comes to Indian cuisine, there are endless possibilities when it comes to pairing food with chicken. However, one of our personal favorites has to be chicken with palak (spinach). The spinach provides a much-needed nutrient boost, while the chicken itself is a fantastic source of protein. Plus, the two flavors compliment each other perfectly! Not to mention, this meal is incredibly easy to make. Simply cook up some chicken breasts (seasoned with salt, pepper, and turmeric), and then stir in some spinach leaves until they’re wilted. Serve with rice or naan bread, and you’re good to go
Palak Chicken Recipe
Ingredients:
- 1 lb chicken breast, cubed
- 1 cup chopped spinach
- 1 onion, chopped
- 1 tomato, chopped
- 1 tsp garam masala
- 1 tsp cumin powder
- 1/2 tsp turmeric
- Salt to taste
- 1/2 cup yogurt
- 1/4 cup cream
- 2 tbsp oil
- water as needed
Instructions:
Step 1. In a large pot or Dutch oven, heat oil over medium heat.
Step 2. Add onions and cook until softened, about 5 minutes.
Step 3. Add chicken and cook until browned, about 5 minutes.
Step 4. Add tomato, spinach, garam masala, cumin, turmeric, and salt. Stir well.
Step 5. Add yogurt and cream. Stir well.
Step 6. Cover pot and cook until chicken is cooked through and spinach is wilted, about 10 minutes.
Step 7. Serve over rice or couscous.
