Step By Step Coronation Chicken Recipe Mary Berry

This is a classic dish and one of Mary Berry’s favourites. It is so easy to make, and can be prepared in advance. Perfect for a dinner party or buffet, it will feed 8-10 people.


2 x 454g/1lb chicken breasts, skinned

2 tablespoons sunflower oil

2 red onions, finely sliced

2 garlic cloves, finely chopped

2 bay leaves

1 cinnamon stick

850ml/1½ pints chicken stock

2 tablespoons redcurrant jelly

3 tablespoons cornflour

salt and freshly ground black pepper

For the mayonnaise:

6 tablespoons full-fat mayonnaise

2 tablespoons double cream

1 teaspoon Dijon mustard

1 teaspoon white wine vinegar

To garnish:

curry powder

cayenne pepper

2 lemons, quartered

1 small bunch of fresh parsley


1. Cut each chicken breast into 3 equal pieces. Heat the oil in a large flameproof casserole dish. Add the chicken and fry over a high heat for 2-3 minutes until golden.

2. Add the onions, garlic, bay leaves and cinnamon stick. Fry for 2-3 minutes until the onions are softened.

3. Pour in the chicken stock and redcurrant jelly. Bring to the boil, then reduce the heat and simmer gently for 10 minutes.

4. Meanwhile, mix the cornflour with a little salt and pepper. Stir into the casserole and cook for 1-2 minutes until the sauce has thickened.

5. To make the mayonnaise, whisk all of the ingredients together in a bowl. Season to taste.

6. When the chicken is cooked through, remove from the heat and stir in the mayonnaise.

7. Garnish with curry powder, cayenne pepper, lemon wedges and parsley. Serve hot or cold. Enjoy!
