Ingredients :

1 x 2.5kg/5lb 8oz free-range chicken

2 onions

1 carrot

2 celery sticks

1 garlic cloves

1 bay leaves

2 sprigs of fresh thyme

600ml/1 pint chicken stock

For the sauce

3 tablespoons mango chutney

2 tablespoons white wine vinegar

1 tablespoon medium curry powder

150ml/¼ pint mayonnaise

150ml/¼ pint double cream

1 tablespoon chopped fresh flat-leaf parsley

Instructions :

Step 1: Put the chicken, onions, carrot, celery, garlic and herbs into a large saucepan. Add the chicken stock and bring to the boil, then reduce the heat and simmer for 1½ hours until the chicken is cooked through.

Step 2: Remove the chicken from the pan and leave to cool.

Step 3: To make the sauce, put the mango chutney, vinegar, curry powder and mayonnaise into a food processor and blend until smooth.
