Step By Step Chicken Casserole Recipe
This is a really easy, tasty chicken casserole that the whole family will enjoy. It’s perfect for a winter evening.
1 onion, chopped
2 carrots, chopped
2 celery sticks, chopped
1 garlic clove, crushed
1.5kg (3lb) chicken pieces
2 tablespoons flour
2 tablespoons olive oil
300ml (1/2 pint) chicken stock
150ml (1/4 pint) white wine
2 bay leaves
4 thyme sprigs
salt and freshly ground black pepper
For the topping:
6 potatoes, peeled and sliced
150g (5oz) Cheddar cheese, grated
1. Preheat the oven to 180C/350F/Gas 4.
2. In a large flameproof casserole dish, fry the onion, carrots, celery and garlic in the olive oil over a medium heat until softened. Add the chicken pieces and fry until golden brown.
